Freezing Persimmons

  1. Use soft ripe fruit.
  2. The fruit may be frozen whole in their skins in plastic bags or as a puree.
  3. To freeze whole: Wash, Dry.
  4. Remove stem and freeze unwrapped on a tray.
  5. Package in plastic bags.
  6. Best used within three months.
  7. To use, hold the frozen fruit under water and slip or rub off skin.

To Puree Prior To Freezing

  1. Remove skins and seeds and put in blender.
  2. After blending, add about 1/4 teaspoons lemon juice per cup of fruit or 1/8 teaspoons ascorbic acid per quart.
  3. Pack in containers and freeze.
