Persimmon Cake

  • 2 1/2 cups sugar
  • 1 cups Crisco
  • 3 eggs
  • 3 1/2 cups flour
  • 2 teaspoons soda
  • 2 teaspoons allspice
  • 1 cups cherries halved
  • 2 cups chopped pecans
  • 2 cups raisins
  • 2 cups persimmons (mashed)
  • 1/2 teaspoons salt
  • 3 teaspoons cinnamon
  1. Beat sugar and Crisco.
  2. Add eggs.
  3. Beat well. Add dry ingredients.
  4. Mix well. (Dough will be rather stiff).
  5. Add nuts, raisins and cherries.
  6. Add persimmons last and beat well.
  7. Bake in tube pan for 2 hours in a preheated 350 degree oven.
  8. Test after 1 and 3/4 hours.
  9. Or bake in 2 loaf pans 3/4 full approximately 1 and 3/4 hours.
