Persimmon - Raisin Cookies

3 dozen

  • 1/2 cup softened butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoons ground cinnamon
  • 1/2 teaspoons nutmeg
  • 1/4 teaspoons cloves
  • 1/4 teaspoons salt
  • 1 cup persimmon pulp
  • 1 teaspoons baking soda
  • 1 cup raisins
  • 1 cup chopped pecans
  1. Cream butter, gradually add sugar, beating well.
  2. Add eggs and beat well.
  3. Combine flour, spices and salt-add to creamed mixture.
  4. Mix well.
  5. Combine persimmon pulp and soda; stir well and add to creamed mixture.
  6. Stir in raisins and pecans.
  7. Drop dough by tablespoons onto greased cookie sheets.
  8. Bake at 350 degrees for 12 to 15 minutes or until done.
